Champagne should be refrigerated for only about 2 hours before serving, according to Sharon Tyler Herbst’s “The Food
Lover’s Tiptionary”. Herbst maintains that refrigerating champagne or other white wines for more than a few hours can dull both the flavour and bouquet.
