Celebrate Madiba`s Birthday with a delicious twist on a South African favourite

Nelson Mandela has played a pivotal role in the liberation of South Africa and in honour of this great man’s birthday and contribution to our beautiful country; we celebrate Nelson Mandela Day on the 18th July and recognise July as being “Madiba Month”.
Pete Gottgens is an acclaimed South African chef that, whist living abroad, had the privilege of being Madiba’s friend as well as personal chef for his oversees trips between 1997-2000. Fortunately for us, Pete returned to South Africa and is now General Manager at Asara Wine Estate and Hotel.
Our great leader also had a bit of a sweet tooth, and in honour of Nelson Mandela Day Pete shares with us one of Madiba’s favourite desserts. This fun twist on a traditional South African recipe can also be found on the menu of Asara’s signature restaurant, Raphael’s.

Chocolate Maize Meal Pudding
Ingredients:
10x whole eggs
10x egg yolks
500g Callebaut dark chocolate
500g unsalted butter
250g castor sugar
40g maize meal
30g cake flour
Pinch of salt
Method:
Melt chocolate and butter in a double boiler. Mix eggs, egg yolks and castor sugar until the sugar is almost dissolved- be careful not to whisk the mixture too rapidly or incorporate too much air. Once the chocolate is melted, slowly add the egg mixture, stirring gently and not beating. Mix in sieved flour, maize meal and salt and mix gently until the flour is well-incorporated. Fill well-greased dariole moulds three-quarters of the way with the mixture, allowing for expansion. Bake at 250°C for seven minutes.
