Food and wine pairing? Or wine and food pairing? I often have this discussion with chefs. When one brings a bottle of wine to the table it could have taken a year or more to make and often much longer to mature, whereas even the most complicated dish takes only a few days (at the most) to prepare. So, rather decide on the wine first and then select the food to match!
Having said that, I take pleasure in announcing that our Creation Viognier 2012 as well as our Creation Sauvignon Blanc-Semillon 2012 will be released by the end of July. Both wines are absolutely gorgeous and like all of our Creation wines, delightfully food-friendly. With the delicately perfumed Viognier I recommend Vegetable Chicken Laksa – a subtle yet irresistibly fragrant Thai soup. With the Sauvignon Blanc-Semillon I suggest a fresh Parsley Chowder - the freshness of the herbs and the seafood perfectly match the freshness and ‘sea breeze’ characteristics of this superb blend!
With the cold weather in mind, I have also paired a few of our red wines with hearty winter dishes. Our rich, complex Creation Syrah with a delectable Fillet of Beef with Risotto and our intensely fragrant Creation Pinot Noir with a flavourful Coq au Vin. You’ll find that both pairings are beautifully balanced with the weight of the wine and the dish complementing each other. Speaking of Coq au Vin: when cooking with wine it is important to always use a good wine (ideally the one that you will be drinking with your food). To create a great dish one needs quality ingredients, just as the winemaker needs quality grapes to produce a great wine.
